Mhammar, fish siniya and arayes
The signature dishes of Galilean Arab cuisine, with its typical ingredients and spices: mhammar — roast chicken with sumac and caramelized onions — fish siniya, arayes, stuffed malfouf in a vegetarian and a meat version, tomato tahini and sabanekh salad, and basbousa with pistachio for dessert. We practise the techniques and working methods of this kitchen, from roasting to stuffing.
The class is hands-on, and the participants prepare most of the dishes themselves. At the end we sit down together to a full meal of everything that was made.
Good to know: This is a meat class. The two meat dishes and the fish dish have no vegetarian alternative; the other dishes are vegetarian. The arayes and the dessert contain gluten. Please tell us about allergies and dietary needs when you register.
Language: Our classes are taught in Hebrew. You can get the recipes in English — and also in French, Italian, Russian, Spanish and Arabic — and the chef will also answer individual questions in English.
