Heritage Home Cooking Class
The cooking of home: green rice with tahdig, pumpkin kubbeh, mafrum, home-made couscous and ijeh patties.

Persian, Iraqi, Moroccan, Tripolitan and Tunisian
Five kitchens in one class — Persian, Iraqi, Moroccan, Tripolitan and Tunisian: green rice with a crispy potato tahdig, pumpkin kubbeh, mafrum — potatoes stuffed with meat — khoresh sabzi, real home-made couscous, Iraqi ijeh patties, msayer — a Tripolitan pickle salad — and nut cigars for dessert. We learn the techniques that are unique to each kitchen, and sit down to a rich and varied meal.
The class is hands-on, and the participants prepare most of the dishes themselves. At the end we sit down together to a full meal of everything that was made.
Good to know: This is a meat class. The green rice, the couscous, the ijeh, the salad and the cigars are suitable for vegetarians; the other dishes contain meat. Please tell us about allergies and dietary needs when you register.
Language: Our classes are taught in Hebrew. You can get the recipes in English — and also in French, Italian, Russian, Spanish and Arabic — and the chef will also answer individual questions in English.
